The Fragile Feast

Photographs by Hannah Collins

February 14 - June 1, 2012

Following a series of conversations with Ferran Adrià - founder of the restaurant elBulli - on the importance of sourcing the perfect ingredients with the maximum quality, British artist Hannah Collins (London, 1956), set out on a journey through Europe, Latin America and Japan to photograph thirty carefully chosen ingredietns from Adrià's cuisine.

Memory and background are key to understanding the creations of this world-renowned Catalan chef, as one can appreciate in these images from Collins' culinary voyage. The photos capture the place of origin, the processof transformation and the preparation in the kitchen of each ingredient, most of which are produced by small family-run businesses. In documenting the creation of 35 dishes by Adrià, the photographer has portrayed anemones from Cadiz, kudzu from Japan, honey from nomadic bees in Italy, or pines from the Pyrenees, among other raw materials. In the process, local delicacies are adopted into a wider culinary language.

"Whenever we analyze a dish or a style, we focus on composition and techniques, even on the precision in the combination of products, but you rarely stop to think that there is a story behind each ingredient," Ferran Adrià explains when cribing Collins' photographic commission. "Hannah has been able to portray beind-the-scenes of each of these ingredients, to follow the thread of a whole series of emblematic products all the way back to the origina, each on with its own specific area, people who have worked with it for a long time, very often following techniques processes handed down from generation to generation."

The outcome fo this project comprising of 250 photos is on view at 60 Wall Gallery until June 1st, and in an impressive book published by Hatje Cantz. Each ingredient in the book is accompanied by a text by Collins describing the work of hunters, farmers or gatheres behind it, as well as maps pinpointing the origins of the products. The result is a fascinating dialogue between art and high cooking.

The exhibition is organized by the artist and Deutsche Bank Art.
