Going global with local cuisine

All over the globe, new markets are springing up for regional products – and this is creating entrepreneurial niches. But is global success also possible with regional cuisines? Borahm Cho, co-founder of the company Kitchensurfing, is convinced that it is. He argues that people worldwide are interested in good, regional products. According to Florian Frey, co-founder of Herman ze German, quality is a relevant success factor in the internationalisation of cuisine. He says: “London has some great food and if you want to penetrate the market here you need to do it right.” Co-founder Azadeh Falakshahi adds: “You can’t compromise.”
